Ingredients:

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 sheet nori (seaweed)
  • 1/4 cucumber, julienned
  • 1/4 avocado, sliced
  • Soy sauce for dipping

Kitchen Tools Needed:

  • Pot
  • Bamboo mat (optional)
  • Knife
  • Cutting board

Instructions:

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  • Remove from heat and let it sit covered for 10 minutes.
  • In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
  • Place a sheet of nori on a bamboo mat or a clean surface.
  • Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  • Arrange cucumber and avocado slices in a line across the rice.
  • Roll the sushi tightly from the bottom, using the mat to help, and seal the edge with a little water.
  • Slice the roll into bite-sized pieces and serve with soy sauce.
