- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 sheet nori (seaweed)
- 1/4 cucumber, julienned
- 1/4 avocado, sliced
- Soy sauce for dipping
Kitchen Tools Needed:

Instructions:
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let it sit covered for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
- Place a sheet of nori on a bamboo mat or a clean surface.
- Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Arrange cucumber and avocado slices in a line across the rice.
- Roll the sushi tightly from the bottom, using the mat to help, and seal the edge with a little water.
- Slice the roll into bite-sized pieces and serve with soy sauce.
